Instant Pot Nigerian Beans Porridge

Beans porridge also known as Ewa riro is a Nigerian delicacy which is a spicy stewed beans dish. Traditionally this is slow cooked in a pot but I'm sharing here the instant pot version which is super convenient to make and just as tasty as slow cooking! If you like to slow cook yours, you can use the same set of ingredients and let it boil until tender. I enjoy serving this with plantains, yum!

Ingredients
- 1lb honey beans or black eyed peas
- 1 red onion, chopped
- 1 scotch bonnet pepper or habanero, minced
- 4 cloves garlic, minced
- 1 finger ( 2 inch) ginger, grated
- 1 tbsp palm oil or 1 tbsp olive oil + paprika
- 1 tbsp dried crayfish
- 1 bouillon cube, crushed
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 tsp curry powder
- 1 tsp chili powder
- 1/2 tsp thyme
- 6 cups of water
Instructions
- Add all the ingredients to a large instant pot. If you have a small size instant pot, you may only be able to make half this recipe.
- Set your instant pot to high pressure for 30 minutes. After it's done, allow to release all the pressure before serving. Enjoy!
