Nigerian Style Fried Rice

Nigerians have a unique style to fried rice with a fragrant spice set and golden yellow color. If you're looking to switch up your fried rice game, this one is for you! I use the same recipe with macaroni pasta for another variation when I need a break from rice. Serve with protein of choice or you can enjoy as is!

Ingredients
- For the rice
- 2 cups rice
- 2 cups broth
- 1/2 tsp curry powder
- 1 tsp salt
- 1/4 tsp nutmeg
- For the stir fry
- 1/4 cup olive oil
- 1 onion, minced
- 2 cloves garlic, minced
- 1 (2 inch) piece ginger, grated
- 1/4 cup peas, fresh or frozen
- 1 green bell pepper, minced
- 1 red bell pepper, minced
- 1/4 cup sweet corn
- 1/4 cup green onion, to garnish
- optional - 1/2 cup cooked protein of choice, minced (chicken, shrimp, beef, tofu)
Instructions
- Cook the rice (I like to use parboiled rice) with the appropriate water to rice ratio but instead of water use broth. Also add in the curry powder, nutmeg and salt to cooking with the rice.
- In a wok or large fry pan, heat the olive oil with the minced onion over medium-low heat until the onion is soft and translucent but not browned. Add the minced garlic, grated ginger and all the vegetables and stir fry on medium heat for a few minutes.
- If including cooked protein, add in to the wok at this time. Finally, include the cooked rice to the wok and mix all in gently. Careful to avoid mashing the rice.
- Garnish with chopped green onion and serve!
