Ingredients

  • To cook the pasta
  • 5-6 cups dry macaroni pasta (500g)

  • 3 1/2 cups broth (chicken, veggie, beef)

  • 1/2 teaspoon olive oil

  • 1/4 teaspoon salt

  • 1/2 teaspoon curry powder

  • 1/8 teaspoon nutmeg

  • 1/4 teaspoon red chili powder

  • To stir fry
  • 1/4 cup olive oil

  • 1/2 onion minced

  • 1 finger ginger (2 inches) minced

  • 3 cloves garlic, minced

  • 1 cup chopped carrots

  • 1 bell pepper, chopped

  • 1/4 cup fresh or frozen peas

  • 2 stalk green onion, chopped

Instructions

  1. In a large stock pot, combine all the listed ingredients to cook the pasta (pasta, broth, oil, salt, curry powder, nutmeg, chili powder). Stir and cook on low medium heat for 20-25 minutes. Taste one piece of pasta to ensure you like the texture. Cook for 2 more minutes at a time if you want a softer pasta.
  2. While your pasta is cooking, chop your onions and vegetables. Also finely mince your garlic and ginger.
  3. You can continue this step while your pasta is still cooking. In a large wok or large fry pan, heat up the 1/4 cup of olive oil for 2 minutes. Stir fry the onion, ginger, garlic, carrots, bell peppers, and peas in the oil for about 5 minutes.
  4. After your pasta is cooked, you can add it into the work or fry pan and stir fry the pasta with the vegetables. Once evenly stirred, it is ready to serve! Enjoy!
